Apricot Salsa
Fresh Apricots
4 oz. red onion
1 oz. olive oil
1 oz. cilantro, chopped
1 oz. lime juice
1 oz. lemon juice
2 tsp. wine vinegar
chopped Jalapeno pepper, minced
1/2 tsp. lime peel, grated
1/2 tsp. ground cumin
White pepper, to taste
salt, to taste
Combine apricots and remaining ingredients in bowl, stirring gently. Cover and refrigerate until served
